Winter produce south of Calgary
In January the list shrinks. That is not a failure of the market. It is the market.
Southern Alberta winter is storage vegetables, greenhouse leaves, and whatever we put up in September.
Squash, cabbage, potatoes, onions, apples, pickles. Dairy. Dry beans. Fish still comes in. Citrus is allowed because we are not writing a purity test.
The work is to make those things taste like dinner, not like a lecture.
