Cooking for a table, not a camera
Plates leave the pass when they are ready, not when they look arranged.
Food photographs poorly when it is honest: juices run, herbs wilt, bread tears. That is fine.
We plate for the person sitting down, in this room, under this light. If you want a picture, take it quickly. The ribeye is better hot.
